Mango, feta and Brazil nut salad

Ingredients

For the salad

· 100g rocket

· 1 medium sized mango (~180g), diced

· 30g feta

· 60g roasted Brazil nuts

· 1 tsp sesame seeds

· ½ red onion (50g), thinly sliced

· Sprinkle of cracked pepper

· 125g punnet cherry tomatoes, halved

For the dressing

· 2 tbsp balsamic vinegar

· 1 tbsp avocado oil

· 1 tsp honey

Salt to taste

Method

1. In a small bowl, whisk together dressing ingredients.

2. In a large mixing bowl, mix all the salad and dressing ingredients together.

Tips

Pecans and walnuts can be used instead of Brazil nuts.
